Spring Detox Salad

Spring is an optimal time to transition from our heavy comfort foods of winter, to lighter fare consisting of lots of fresh vegetables, and greens. The recipe below contains great foods for supporting and cleansing the kidneys and liver, as well as lots of good fiber to help keep the colon moving smoothly.

Spring Detox Salad – Serves Two
2-3 Handfuls Organic Arugula
2-3 Organic Carrots Shredded
1/2 Organic Beet Shredded
1-2 Handful Broccoli Sprouts
1 Can Organic Chick Peas (Garbanzo Beans)

Dressing

1 Tsp Apple Cider Vinegar
2 Tblspn Spicy Brown Mustard
2 Tblspn Olive Oil
1 Tsp Grated Fresh Ginger
Sprinkle of Sea Salt
Optional Boost: 1-2 Raw Garlic Cloves Pressed

Directions: Toss all the salad ingredients together in a bowl. Mix the dressing ingredients in a separate bowl, add to the salad, and mix thoroughly. Enjoy!
